Louisiana Seafood Gumbo - {American}

Superb American meal, especially to you okra lovers out there. Serve hot to 4 to 6 people.

Recipe Ingredients

4   Bacon
1   Onion - chopped
1/4 cup 36g / 1.3ozChopped green pepper
1 cup 110g / 3.9ozChopped celery
1 tablespoon 15mlChopped parsley
2 cups 125g / 4.4ozChopped fresh or canned tomatoes
4 cups 948mlFish stock
2 cups 474mlSeafood - shrimp, crab,
  And/or fish fillets
2 cups 474mlSliced okra in rounds
1 cup 160g / 5.6ozCooked rice

Recipe Instructions

Fry the bacon til crisp, then remove and reserve. Add the onion, pepper, and celery to the bacon fat and saute until yellow. Add the parsley, tomatoes, and stock, and cook until all the vegetables are tender. Stir in the seafood, the okra, and the rice. Cook for 10 minutes, until the fish is just cooked.

When ready to serve, ladle into bowls and top with the reserved bacon, crumbled.
