Louisiana Seafood Gumbo - {American} Recipe - Cooking Index
Superb American meal, especially to you okra lovers out there. Serve hot to 4 to 6 people.

1 | Onion - chopped | |
1/4 cup | 36g / 1.3oz | Chopped green pepper |
1 cup | 110g / 3.9oz | Chopped celery |
1 tablespoon | 15ml | Chopped parsley |
2 cups | 125g / 4.4oz | Chopped fresh or canned tomatoes |
4 cups | 948ml | Fish stock |
2 cups | 474ml | Seafood - shrimp, crab, |
And/or fish fillets | ||
2 cups | 474ml | Sliced okra in rounds |
1 cup | 160g / 5.6oz | Cooked rice |
Fry the bacon til crisp, then remove and reserve. Add the onion, pepper, and celery to the bacon fat and saute until yellow. Add the parsley, tomatoes, and stock, and cook until all the vegetables are tender. Stir in the seafood, the okra, and the rice. Cook for 10 minutes, until the fish is just cooked.
When ready to serve, ladle into bowls and top with the reserved bacon, crumbled.
